Simple and satisfying, this chilled bean salad has Mediterranean flavor and is great as a side dish or a main course.
1 can white beans, drained and rinsed
1 cup chopped fresh Italian parsley, rinsed
2 fresh tomatoes, chopped
½ red onion, minced
½ lemon, juiced
2 tablespoons balsamic vinegar
¼ teaspoon sea salt
1 tablespoon extra virgin olive oil
Mix all ingredients and serve or chill.
